Tomato Croque Monsieur Sandwich
Yesterday we got four decent looking tomatoes at the store! Yes, I know that isn’t newsworthy in most places, but here it is amazing. The store here is the worst stocked in any of the places we have ever been. It is crazy but what can you do.
So I decided to be decadent and make this for lunch, using a tomato each. I didn’t have any dijon mustard, again it is one of the seemingly impossible things to get here, so made do this time with yellow mustard. The dijon adds so much to the sandwich, but even with just yellow mustard it is a really great sandwich. It has a great crust once cooked.
Mybe my bread was thirsty but the 1/4 cup wasn’t quite enough, and the 1/4 cup of flour was too much.
Tomato Croque Monsieur Sandwich
- 1/4 cup milk (50 mL) milk
- 1/4 cup all-purpose flour (50 mL) all-purpose flour
- 2eggs
- 4 slices whole wheat bread
- 2 slices Cheddar cheese or fontina cheese
- 2 tsp Dijon mustard (10 mL)
- 1 tomato , thinly sliced
- 1/4 pepper
- 2 tsp (10 mL) extra virgin olive oil
Pour milk into shallow dish. Place flour in separate shallow dish. In third dish, lightly beat eggs.
Dip both sides of bread into milk to moisten but not soak.
Place cheese on 2 of the slices; spread with mustard. Top with tomato; sprinkle with pepper. Top with remaining bread. Holding sandwiches together, dip into flour then eggs to coat.
In nonstick skillet, heat oil over medium heat; cook sandwiches, pressing slightly occasionally and turning once, until crisp and golden and cheese is melted, about 8 minutes.
This is the second awesome grilled cheese I’ve seen today. I’m going to take it as an omen.
