Bacon, Peanut Butter, Beef and Vegetable Birthday Cake… for a birthday pup

Echo was three at the weekend, so I made her a cake with all of her favourite things.  Though, she did point out I forgot the chicken and ribs…

This is very easy to make, and from the reaction of the birthday girl, her brother and their friend it was pupperly yumtastic.

Bacon, Peanut Butter, Beef and Vegetable Birthday Cake… for a birthday pup

  • 2 eggs
  • 1/4 cup peanut butter
  • 1/4 cup cooking oil
  • 1 teaspoon vanilla extract
  • 6 to 8 slices of bacon
  • 1 cup whole wheat or white flour
  • 1 teaspoon baking soda

Preheat oven to 350 degrees F (175 degrees C). Oil and lightly flour a nine inch cake tin.

Cook bacon to just done.  Cut into pieces.

Combine the eggs, peanut butter, oil, milk, and vanilla in a large bowl; blend well. Stir in the bacon and mix thoroughly. Sift together the flour and baking soda and fold into the carrot mixture. Spoon cake batter into prepared pan.

Bake in preheated oven for 40 minutes. Let cake cool in pan for 10 minutes; then turn out onto a wire rack to cool completely
