Creamy Garlic Mashed Potato

  • 1 kg peeled russet potatoes
  • Little butter for sauteeing the garlic
  • 1 clove of finely diced garlic (more if you want it really garlicky – which I do)
  • 1 cup milk or cream
  • large knob of butter for mashing
  • salt and pepper to season

Cook potatoes until tender. Drain water and use pot to melt the little butter and saute the garlic, remove garlic from pot.

Return potatoes to pot to dry on heat for a minute.  Shake pot well and mash the potatoes roughly.

Add the large knob of butter and garlic then mash potatoes again.  Add milk or cream and mash again.  Season to taste with salt and pepper.

If you want to prepare the potatoes ahead you can do so and reheat in an oven preheated to 350 degrees.  Spoon potatoes into an oven proof dish bake until fully reheated.
