Potatoes Romanoff

This is a really great potato side dish, which has all the flavour of a fully loaded baked potato and is baked to golden brown in the oven.  Really simple and delicious. Potato perfection.  Where the name came from I don’t know, but they are great potatoes!

Potatoes Romanoff

  • 2 lbs whole baked potatoes, grated or chopped small
  • 1/2 cup finely minced onions
  • 2 cups grated white cheddar cheese
  • 1 1/2 cup sour cream
  • salt and fresh ground black pepper to taste

In a large bowl combine the potatoes, onions and cheese (reserving about 1/2 cup to sprinkle on top), salt and pepper to taste.

Gently fold in the sour cream until just combined.

Butter a casserole dish or individual ramekins and spoon in the potatoes.  You want an irregular surface with lots of nooks and crannies.

Top with remaining cheese and bake at 350 degrees for 25 to 30 minutes, until golden.
