Slow Cooker Sweet and Sour Chicken

This is a really simple, fast preparation for chicken legs/pieces/breasts to cook in a sweet and sour sauce in the slow cooker.  Everything is combined in the slow cooker and then allowed to do its magic.  Usually I would add carrots sliced into matchsticks and slices of green pepper but the plane didn’t bring fresh produce this week.  Also, I would add water chestnuts and bamboo shoots, but I can’t get them where we are currently at all.

Slow Cooker Sweet and Sour Chicken

  • 1 ½ lbs/ 0.7 kg boneless, skinless chicken breasts or thighs
  • 1 thinly sliced onion
  • 1 cup pineapple chunks
  • juice from pineapple can
  • 2 tbsp tomato sauce/ ketchup
  • 1 cup water
  • 1 clove garlic finely minced
  • 1 teaspoon ginger
  • ½ cup white vinegar
  • 1 tbsp soy sauce
  • 1 cup brown sugar
  • 2 tbsp cornflour
  • 2 tbsp water

Combine sauce, cup water, vinegar, soy sauce and sugar in slow cooker. Stir.

Add chicken. Stir and cover. Cook on Low for 6-8 hours or on High for 3-4 hours.  Shred chicken and

Combine cornflour and second amount of water in small bowl. Stir into slow cooker. Cook on High, stirring often for 15 – 20 minutes until thickened. Serve with rice.
