Quick and Easy Peanut Butter Cookies

These are one of the quickest cookies I make and I have no notion where I got the recipe, it was scribbled on a piece of paper.

They are very peanut buttery, so you could add some flour to ease that but I like them like this at times.

When you roll the ball, you can criss cross them gently with a fork, but you don’t have to.

You do however, definitely, have to give them time to cool on the cookie sheet.  Otherwise you will have crumbs!

Quick Peanut Butter Cookies

  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon baking soda

Preheat oven to 325 degrees F (165 degrees C).

In a medium bowl, mix together the peanut butter, sugar, egg, and baking soda until well blended. Roll dough into 1 inch balls, and place on ungreased cookie sheets.

Bake for 6 to 8 minutes in the preheated oven. Cool on cookie sheets until set, before transferring to wire racks to cool completely
