Peanut Butter Pancakes

In a house that loves pancakes,  it is not unusual for them to appear on the breakfast menu, nor is peanut butter on them that irregular.  But peanut butter IN the pancake batter was a new notion.

And sandwiched with jam (Allan’s mom did it that way, so you just know I have to as well!) they were the perfect peanut butter and jelly pancake breakfast.

Eating them in bed on a weekday was decadent – and Echo was delighted as someone might have spilt… and she loves to help her Mommy clean up messes.

Fluffy Peanut Butter Pancake Perfection!

Peanut Butter Pancakes

  • 1 cup All Purpose Flour
  • 2 tablespoons sugar
  • 1  tablespoons baking powder
  • 1 large egg
  • 1/3 cup Extra Crunchy Peanut Butter
  • 1 cup milk – I used 1 1/4 cups as the batter was so thick
  • 2 tablespoons Pure Canola Oil
  • No-Stick Cooking Spray

Stir together flour, sugar and baking powder in large bowl.

Beat egg with peanut butter in small bowl until blended. Stir in milk and oil. Add all at once to the dry ingredients, beating until blended.

Heat skillet over medium-high heat or griddle to 375 degrees F. Spray with no-stick cooking spray. Pour 2 tablespoons batter for each pancake onto skillet. Cook until bubbles break the surface. Turn and brown the other side.

Serve with syrup, fresh fruit or powdered sugar
