Tomato and Corn Chowder

A cold day that called for soup, and this Tomato and Corn Chowder is what I came up with.

Tomato and Corn Chowder

  • 1/2 onion, finely diced
  • 1 knob butter
  • 1 small potato, peeled and cut into small cubes
  • 1 teaspoon garlic plus seasoning
  • 1/2 cup frozen corn kernels
  • 1 tin tomato paste
  • 1/2 cup dried vegetable flakes
  • 1/2 cup mashed potato
  • 2 cups water (or vegetable stock)
  • 2 tablespoons fine pasta
  • salt and pepper to season

Saute the onion and potato in butter until golden.  Add garlic seasoning and corn and saute for a couple of minutes.  Add tomato paste and water.

Bring to a low simmer.  Add rest of ingredients and simmer for ten minutes.  Season and serve.
