Individual Meatloaf

Meatloaf was not something that came up in our food vocabulary as children, so when I moved to Canada I was intimidated by something that everyone here seemed to know and love since they were knee high to a grasshopper.  I didn’t want to do it wrong…

This was my first meatloaf attempt and from Allan’s reaction it won’t be my last.

Mini Meatloaf Recipe:

  • 1 1/2 pounds ground beef
  • 1 egg
  • 1 onion, chopped
  • 1 cup milk
  • 1 cup dried bread crumbs
  • salt and pepper to taste
  • 2 tablespoons brown sugar
  • 2 tablespoons prepared mustard
  • 1/3 cup ketchup
  • cheese

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste.
Spray your muffin tin with cooking spray. Place in a handful of prepared meatloaf into each muffin tin. Press your thumb into each meatloaf ball, making a space for toppings.
In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and spoon into the thumbprint.
Bake at 350 degrees F for 30 minutes or until cooked through.
Add your favourite cheese and bake for a further 5 minutes.
