Mini Bolognese Pies

I had some left over bolognese sauce and decided to use it as a pie filling, instead of reheating to use on spaghetti for a second evening, and then decided to make mini pies as they are just cuter.

Preheat oven to 375 degrees.

Roll out pie crust to approx. 5mm in thickness and cut out six 2 inch diameter circles and six 1 1/2 inch diameter circles.

Use 2 inch circles to line the bottom of muffin tin.

Fill pie with leftover bolognese sauce and top with the 1 1/2 inch circles of pie crust.

Press the lid to the base of the pies to seal and then cut a slit in the lid to let out the steam.

Bake at 375 degrees for approximately 20 minutes.  Let cool for a couple of minutes before removing from muffin tin.
