This makes a quick and easy lunch or side dish for dinner. You can use any vegetables that are hanging out in the fridge or mixed frozen vegetables. If you want to make it into a main dish just add some diced ham or chicken.
- 1 onion
- 1 tomato (optional)
- 1 tablespoon oil
- 1 knob butter
- 1 cup long grain rice
- 1 x 5ml spoon vegetable stock powder or cube
- 2 1/4 cups boiling water
- 1 cup chopped mixed vegetables – choose whatever you like
- 1 teaspoon curry powder
Fry the onion in oil and butter until soft. Add the mixed vegetables and cook for a further 2 minutes. Stir in the rice.
Mix the spices and stock with the water. Add to the rice mixture.
Simmer for 15 minutes, until the rice is tender.
Serve the rice in a bowl and sprinkle the chopped tomato on top.
