Jamie Oliver’s Pan “Roast” Potatoes
Roast potatoes are a very important thing in our family, they are not merely a side dish or something that goes with meat. Roast Potatoes are a meal in themselves. My little nieces can eat their own body weight in “roasters” every Sunday and a competition is held regularly.
These potatoes are not oven roasted but are simmered and then “pan roasted” until crispy and brown. The lemon gives them an extra edge. Crushing them slightly, gives more surface area to be browned and crispy.
Jamie Oliver’s Pan “Roasted” Potatoes
- Olive oil
- Lemon zest
Quarter potatoes with skin on and simmer until tender.
Heat olive oil in sauté pan. Add hot, cooked potatoes and crush lightly.
Add a knob of butter and lemon zest, allow to brown.
