Onion Gravy

This is a really simple, yet very delicious gravy.  I make it with vegetable stock, but reckon beef stock could add another dimension to it, if you choose to use it.

I served this with mashed potato and Toad in the Hole.

Perfect for a cold winter’s evening.

Onion Gravy

  • 2 tablespoons butter
  • 2 onions, sliced
  • pinch of sugar
  • 4 teaspoons plain flour
  • 1 1/2 cups vegetable stock stock

Melt the butter in a medium pan, add the onions and cook for 5 mins or until golden brown.

Add the sugar and cook over a low heat for 2 mins or until caramelised.

Add the flour to the pan and cook, stirring for 1 minute. Gradually add the stock, then bring to the boil and simmer for 1 minute or until right consistency.

Season to taste and keep warm.
