Crispy Home Fries

A great way to use up left over boiled potatoes, or in my case, to boil potatoes today to use tomorrow.

These crispy home fries are a great way to use up left over boiled potatoes, or a great excuse to boil potatoes just to have to use them up.  The butter makes them deliciously crispy on the outside, while being pre-boiled allows for a fast preparation and tender insides.

  • 2 tablespoons Vegetable oil
  • 1 pinch pepper and salt
  • 4 large potatoes
  • 1 clove of minced garlic
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1 sliced scallion or 1/2 diced onion

Scrub potatoes. In pot of boiling salted water, cook potatoes for 15 minutes or until tender but firm; drain well. Refrigerate until cold.

Cut potatoes into 1/2 inch cubes. In non stick skillet, heat oil and butter over high heat; sauté onion (if using white onion) until transparent, then remove onion and cook potatoes, turning to coat all, for 3 to 4 minutes.

Cook for about 8 minutes longer, turning often, or until crisp and golden.

Remove from heat; stir in sautéed white onion or scallion, garlic, salt, pepper and paprika.

It was a cold day today, snow and ice outside and a broken furnace on the inside.  But Bob and Ex seemed to be okay.   This was Bob’s way of ending our game of football, by taking his ball and going to lie down.
