Creamy Pasta Pronto

Sometimes I really crave a creamy pasta, and this is a quick meal that satisfies my need for creamy, pasta comfort in a bowl.  The creamy sauce cooks in the same time as the pasta, so it really is fast food.  Perfect for an evening when you need something warm and filling, yet don’t have much time or inclination to cook.

Creamy Pasta Pronto – enough for four!

Creamy Pasta Pronto

  • 4 ounces spaghetti
  • 1/3 cup butter, divided
  • 1/2 cup onion
  • 1/4 cup sliced green bell pepper
  • 1/4 cup sliced red bell pepper
  • 1/4 cup sliced mushrooms
  • 3/4 cup milk
  • 1 pack of cream cheese
  • 1/3 cup grated parmesan cheese

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

In a skillet, melt 1/4 cup of the butter.
Sauté onions and green peppers.
Add cream cheese and milk and stir over low heat until cream cheese is melted.
Stir in parmesan cheese.
Toss spaghetti with remaining butter. Combine with cream cheese mixture; toss lightly.
