Anyone who has read more than one post on this blog knows that I have several obsessions; one of them is potatoes, in any form. Another is using left overs in creative and delicious ways.
This is potato and a great way to use left overs! 🙂 That makes me happy. What more need I say?
These puffs really are light and would be good finger food as well as a side. A half recipe makes eight puffs.
- 1 cup flour
- 2 tablespoons snipped parsley
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon garlic and onion powder
- 2 beaten eggs
- 1 cup mashed potatoes
- cooking oil (for deep-fat frying)
Combine flour, parsley, baking powder, salt and onion powder. Stir in eggs and mashed potatoes, mixing well.
Heat 1 1/2 inches of oil to 365ºF degrees.
Using about 1 well rounded tablespoon for each, drop potato mixture into hot oil a few at a time. Fry for 3 to 4 minutes or until golden brown. Drain on paper towel.
