I am always looking for something different to make for lunch when Allan comes home from school. And these really simple little tuna cakes seemed like a good change from soup and sandwiches.
These tuna cakes were really simple to put together and made a great lunch with a little orzo and tomato sauce.
Makes 4 patties
- 1 egg
- 2 cans water packed flaked tuna, drained well
- 2 tsp Dijon mustard
- 1 tsp red chili paste
- 2 tbsp fresh parsley, finely chopped
- ½ cup large flaked oats
- About a tsp olive oil, additional for cooking
Mix together all the ingredients in a bowl, and then make four balls. Place these balls on a baking pan lined with wax paper, and then flatten to about a half inch thickness. If you have the time, chill the patties in the fridge for about an hour so that they stay together better when you cook them.
In a skillet, lightly fry the patties in oil for about 4 minutes per side
