Egg Blossoms or Salsa Baked Eggs

This is a really easy way to start your day with a delicious breakfast that takes no time to prepare and cooks while you do whatever else you need to.

They are also perfect for a brunch or an occasion when you are serving breakfast to guests as they look so pretty and yet are so simple that they are completely stress free.

Egg Blossoms or Salsa Baked Eggs

  • One or two eggs per person
  • 1 large teaspoon of salsa per egg – I add beans in the salsa sometimes as well
  • Half a tortilla per egg
  • Salt and Pepper

Preheat oven to 350 degrees.

Rip tortillas into pieces and use to line the slots of a muffin tin,one per egg, pressing them to shape. I find it best to line every other one rather than have them all crowded together. Overlap the tortilla so that the filling and egg will not leak out.

Put a teaspoon of salsa onto the tortilla and then crack an egg on top.  You could top the eggs with cheese, at this stage, if you choose.

Season to taste and bake for approximately 15 minutes or until the white has turned opaque.

Serve hot with some fresh cilantro or chilli or whatever you feel like!
