Faux Vegetable Lo Mein

I had never heard of Lo Mein until Allan ordered it for me on our anniversary.  It was so good.  I am still trying to figure out the exact difference between chow mein and lo mein but that is an aside.

To go with the stir fried romaine I reckoned Lo Mein would be perfect, albeit faux as I hadn’t put chinese noodles on the list.  Though that probably wouldn’t have made much difference…

I used spaghettini, which was close but not authentic.

This was such a quick dish to throw together and was really delicious with the romaine.

Faux Vegetable Lo Mein

Faux Vegetable Lo Mein

  • Chinese Noodles (enough for the number of people eating and how hungry they are)
  • 2 tbsps seasame or peanut oil
  • 3/4 cup water
  • 1/4 cup soy sauce
  • 1-2 tsp cornstarch
  • 5 cups mixed vegetables – such as mange tout, onions, bell peppers, bean sprouts, water chestnuts, bamboo shoots or whatever you want

Cook noodles for three minutes.

Mix water, soy sauce and cornstarch in a bowl.

Heat oil in hot wok (or frying pan).

Stir fry sturdier vegetables for three minutes.

Add water, soy and cornstarch and cook for two minutes.

Add rest of vegetables and cook until al dente.

Toss noodles into vegetables and toss until mixed.
