Oven Roasted Baby Red Potatoes

I know that I said that once I left the rez I would never buy red potatoes again.  But at the Farmer’s Market at the weekend the little baby red potatoes were just so cute, and I couldn’t resist.

Using dry mustard powder and flour on potatoes to be roasted was something my grandmother told me about.  It adds a crispy coating that is full of flavour and with the potato roasted to tender perfection all that was needed was a dash of salt.

Oven Roasted Baby Red Potatoes

Oven Roast Baby Red Potatoes
• Approx 1lb Baby Red Potatoes
• 2Tbsp Extra Virgin Olive Oil
• 1Tsp Salt
• 1Tsp Pepper
• 2Tbsp Onion Powder
• 2Tbsp Garlic Powder
• 1Tbsp Flour
• 1 Tsp Dry Mustard Powder

Pre-heat oven to 425 degrees.

Wash and half potatoes (leave skin on) and place on cookie sheet.

Coat potatoes with EVOO, salt, pepper, onion powder, garlic powder and flour. Toss gently.

Cook potatoes for about 30 minutes or until fork tender.
