This really is a magic pie.  First of all you just mix everything in one bowl and bake it and magically you get a moist crust at the base and a really light coconut pie.  Secondly, I hate coconut,  yet I love this pie!

Magic.

No other explanation for it.

I was given the recipe by A Boleyn, from the Food Porn Community in Live Journal, when I posted the crustless quiche I made a couple of weeks ago, and I have been keen to try it since then though the fact that Allan only likes coconut “from time to time” and my feelings of antipathy towards coconut put me off a little.  Then I decided that I couldn’t bear the suspense anymore.

It’s a magic pie!

I had to try it.  With a name like that how could I resist?

Magic Coconut Pie

No crust coconut Pie.  Just mix everything and you get a coconut pie.

  • 4 Eggs
  • 1/4 cup Melted butter
  • 1 cup Sugar
  • 1/2 cup Flour
  • 1/2 tsp Baking powder
  • 2 cups Milk
  • 1 cup Shredded Coconut
  • 1 tsp Vanilla extract

In a large bowl, mix all ingredients together.

Pour in a greased 10-inch wide, 1-1/2″ deep pie dish.

Ready to bake

Bake in a 325 deg F oven for 1 hour or until golden brown.

Golden, toasty and deliciously magical!
