Chicken and Rice Soup

Allan isn’t feeling well. He has a bug, one of the many that seem to circulate over and over here. And when he is sick there is little he wants to eat.

Chicken and Rice Soup always seems to settle his stomach and help him recover.

It is exceptionally simple to make and very easy to digest.  It isn’t as though anyone needs a recipe for this, but all the same I thought I would post it.

Chicken and Rice Soup

Poach three chicken breasts in enough water to cover. Add two sachets of chicken bouillion. Other seasonings can be added depending on your taste. I add a dash of soy sauce at times.

Simmer until the chicken is tender.

Remove chicken and shred with two forks.

Sieve the liquid at least twice to get rid of any impurities and get it as clear as possible.

Return liquid, and two further cups of broth/water and the shredded chicken to the pot.  Add 1/2 cup of uncooked rice.

Return to a simmer until rice is cooked.
