Need I say more?
These are so simple to make and taste great. They keep for a day or so really well, but not much beyond that. Not that that has ever been an issue in this house. 🙂
Banana Chocolate Chip Muffins
1 large egg
(1/6 cup) 40 ml cooking oil
(1/6 cup) 40 ml milk
3 mashed ripe bananas
1 cup/250 g flour
½ cup/125 g granulated sugar
1 tbsp baking powder
1/2 tsp salt
½ cup/100 g chocolate chips
|Preheat the oven to 200°C (gas mk 6, 400°F). Place the egg, oil, mashed bananas and milk in a large mixing bowl and beat together.
In another bowl place the flour, sugar, salt, baking powder and chocolate chips and mix. Pour in the liquid into the dry mix and stir until just blended.
Line a muffin tray with paper muffin cases, and then fill each case to just below the top with the muffin mixture. Bake the muffins for 20-25 minutes. They are cooked when a skewer inserted into one and then removed comes out clean (apart from any chocolate!).
There was a reason that I made these muffins, at this time.
We live in a fly in community currently. There is one store which rarely has fresh produce and when it does the cost is ridiculous. $1.50 for an apple. One apple.
So, we use a scheme called “Food Mail” which is less expensive and allows us access to fresh produce. The only thing is that at times there are “disasters”.
Such was the case this week. I ordered six bananas.
This is what I got. Three frozen solid bananas.
It was a toss up between muffins, bread or chucking them out. Muffins won.
