Cowboy Candy Bars
I love browsing recipe sites and this candy bar recipe caught my attention because of the name. I am a sucker for anything with a cute or unusual name. Plus, I really wanted some candy, and I figured the oats would make me feel less guilty.
Because, obviously, oats cancel out chocolate, sugar, corn syrup, butter and peanut butter…
It is good with the chocolate and peanut butter top on the oats, but the oats are actually great all by themselves, so I would happily have just the oat layer as a treat. It is really sweet, so a little goes a long way to satisfy that sweet tooth craving.
Cowboy Candy Bars
- 4 cups oatmeal
- 1 cup butter
- 1/2 cup white corn syrup
- 1 cup brown sugar
- 1 (6 ounce) package chocolate chips
- 3/4 cup crunchy peanut butter
Mix oatmeal, butter, corn syrup and sugar as for a pie crust. Pat into bottom of a greased 9 x 13-inch pan. Bake at 350 degrees F for 10 to 15 minutes. Cool.
Melt chocolate chips, then add peanut butter. Spread over baked layer. Refrigerate. Cut into squares before completely hardened.

Candy recipes are fun but my thermometer always gives me problems when I try to make them. I like that this one doesn’t use one and is so straightforward. And you can portion control the size of the squares. Winning all the way with this great recipe.
The base alone is great in this. And it didn’t last long!
Hi Alison; I was looking for something like “Cowboy Candy Bars” because I wanted to make small, powerful little snack bites for our choir break next month. So tonight I’ve made a batch and am waiting for them to cool enough to put in the fridge and then cut. I did a few things differently because of what I had in the house but so far everything has worked. Once I’ve cut and sampled them, I’ll comment again and let you know. Hi Alison; You’re right about these bring rich but I love them! I didn’t have a 9×13 pan handy at the time so I used a 9×11 and cooked the base 5 minutes longer. The bigger pan is definitely a better idea for a firm base though. I was out of syrup but had some pancake syrup left and it was just enough. I was short about 2/3 cup of oats so I rummaged around in the cupboard and found two of those instant oatmeal cereal packets in cinnamon (a flavour my spouse never eats, so they needed to be used). When I weighed by packet of chocolate ships it registered 9 oz so I threw the whole lot in; and it was dark chocolate instead of milk chocolate. Oh, and then I added about 1/3 cup of raisins. I know you don’t like them (they really do look so much like small animal turds!) but the results were great. After scoring the bars, I put the pan in the so-called “freezer” of our mini fridge and it all hardened nicely. Next time, I’ll follow the recipe more exactly, but I still love snacking on what I made this first time. Cheers, Pauline.
