Carolina Style BBQ Sauce
I have never been to Carolina, so I am taking the word of the website I got the recipe from that it is authentic. Whether it is or not only people from Carolina will know, but I reckon it is pretty good no matter where it comes from. It is different to the BBQ sauces I grew up knowing. But it rocks.
That it was to be simmered for so long seemed a bit strange, but the time simmering turned it into a sauce to die for. And the smell in the house as it cooked was driving me insane as it smelt so good.
It is a mustard and vinegar based BBQ sauce rather than a tomato based one and it has a little kick which is great. Someone said it was hard to believe that there is no tomato in it, because of the colour, and I agree. I expected it to be more yellow, but the chilli and soy sauce must be the reason it is so dark; that and the long simmering time.
Carolina Style BBQ Sauce

- 1 cup prepared yellow mustard
- 1/2 cup sugar
- 1/4 cup light brown sugar
- 3/4 cup cider vinegar
- 1/4 cup water
- 2 tablespoons chili powder
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- 1/4 teaspoon cayenne
- 1/2 teaspoon soy sauce
- 2 tablespoons butter
- 1 tablespoon liquid smoke (hickory flavoring)





It’s hard to believe there is no tomato in there after looking at the deep brown colour but I guess the chili powder and soy sauce contributed greatly to the sauce. Sounds like it would be very tasty.
The colour surprised me, too, the first time. But as you say it is the chilli and soy sauce. It is a spicy sauce, which makes it my favourite and Allan’s least favourite.
I don’t use bbq sauce often enough to invest the time in making my own. I haven’t really found a bbq sauce that I like either though I’ve tried a variety of commercially prepared ones of both the inexpensive and pricey types. I settled on the Kraft regular bbq sauce in the meantime.
When I need one and don’t have time (or the inclination!) to make one I use Kraft too!
This brings me back to my college days!
